Diane's Potato Salad

Introduction

Number of Servings: 6

Ingredients

    4 medium to small potatoes, in skins
    1/4 cup green pepper
    1/4 cup scallions


    Dressing
    1/4 cup Kraft Mayo with Olive Oil, reduced fat
    1 Tblsp yellow prepared mustard
    1/4 t paprika
    1/4 t black pepper
    Dash of sea salt

Tips

I like to vary this recipe a little, by adding green olives chopped, or topping the dish of salad with sliced boiled egg, sprinkled with paprika.


Directions

Boil potatoes in skins, until tender/crisp. Cool in ice water, then peel and dice into small mixing bowl. Add the green pepper and scallions.

Mix dressing ingredients well and pour over potato mixture.

Serving Size: Makes 6 1/2 servings
