3 eggs, separated 1/2 tsp Salt 2 cups Buttermilk 2 cups flour 1 tsp Baking soda 1 tsp Baking powder
Combine egg yolks, salt, buttermilk and beat well. Add flour, baking soda, and baking powder. Beat egg whites in a separate bowl until stiff. Add to batter mixture. Heat Aebleskiver pan and put small amount of butter, oil or non-stick cooking spray in each cup. Fill each cup 2/3 full of batter and fry until bubbly on top.Turn batter about a third way, and fry until bubbly. Turn batter about another third, with a slight twist (this turning and cooking is what creates the ball shape). When all turns are completed, there shoud be a small opening in the ball to 'stuff' it with your choice of ingredients. Makes 4 batches with a 7 ball pan (28 total, serving calculated per aebleskiver).
Can be filled with syrup, fruit, jelly/jam, or anything you can imagine! (fillers are not included in per service calorie caculation given and will need to be added depending on what you use).
Tip - make sure you Aeleskiver pan is hot prior to starting your first batch.
