Turkey with Asparagus and Pasta

Introduction

I got the idea from The Chicken and Asparagus Pasta recipe here on SP, but I had turkey and it seemed a bit bland, like a basic starter recipe. So I added a lot more veggies and the white wine for some added flavor. Number of Servings: 4

Ingredients

    1 Tbl extra virgin olive oil
    4 cloves garlic (20g)
    1/2 red onion (88g)
    1 bell pepper (125g)
    1 large fat carrot (93g)
    1/2 large zucchini (103g)
    2 handfuls oyster mushrooms (122g)
    4 or 5 spears asparagus (243g)
    3 turkey breast strips (391g or 13 oz)
    1/4 white wine (used Pinot Gris)
    3/4 cup chicken stock
    Pasta - I used 200g of something called Gigli because I liked the shape but it is probably not available in the USA

Directions

Dice garlic, onion & pepper and sauté in olive oil on medium until soft. Chop turkey into bite size pieces and add to pan; cook until half of turkey is white. Chop/slice rest of veggies and add to mixture with wine and chicken stock. Cover with lid and cook until turkey is done and veggies soft, time depending on your stove.

Prepare pasta according to package directions. Drain and add to turkey and vegetables. Divide into 4 extremely hearty servings (approximately 520g each) or into 6 or 8 smaller portions. This recipe is based on 4 servings.

Season as desired to your taste. I used lemon pepper and an Italian seasoning blend.
