Introduction

This versatile dinner fixed in the crock pot makes for quick dinners the rest of the week. This versatile dinner fixed in the crock pot makes for quick dinners the rest of the week.
Number of Servings: 12

Ingredients

    3 Meduim onions diced
    8 Meduim celery stalks diced
    1 28 oz can of chrushed tomatoes
    1 7 oz can Chopped green chilies
    1 4 oz can mushrooms
    2 Tbsp minced garlic
    1 15.5 oz can of Light red kidney beans
    1 15.5 oz can Black beans
    2 Lg Chicken breasts chopped (skinless/boneless)
    2 pkgs of fajati seasoning mix

Tips

To thicken: right before serving mix 2 Tbsp of cornstarch in 1/4C cold water drizzle over the crockpot mixture and stir well on high heat for a few minutes until it thickens.
This is nice served over 1/2 a baked potato and topped with sourcream and shredded cheese. Or with tortilla chips. Or in a bowl or a tortilla with shredded lettuce, topped with sourcream, cheese and hot-sauce.


Directions

Put everything in the crock pot. Mix well and cook on high for 4 hours or low or 7-8 hours.
