3 Meduim onions diced
8 Meduim celery stalks diced
1 28 oz can of chrushed tomatoes
1 7 oz can Chopped green chilies
1 4 oz can mushrooms
2 Tbsp minced garlic
1 15.5 oz can of Light red kidney beans
1 15.5 oz can Black beans
2 Lg Chicken breasts chopped (skinless/boneless)
2 pkgs of fajati seasoning mix
To thicken: right before serving mix 2 Tbsp of cornstarch in 1/4C cold water drizzle over the crockpot mixture and stir well on high heat for a few minutes until it thickens.
This is nice served over 1/2 a baked potato and topped with sourcream and shredded cheese. Or with tortilla chips. Or in a bowl or a tortilla with shredded lettuce, topped with sourcream, cheese and hot-sauce.
