Introductiona vegetarian twist on the egg mcmuffin! a vegetarian twist on the egg mcmuffin!
1 medium, slightly firm eggplant, cut up into about 12 slices about 1/2" thick.
2 Cups italian breadcrumbs
2 Eggs, slightly beaten
12 english muffins
2.5 cups Cheddar cheese
12 TBSP fat free mayo
1 3/4 cup onion
(this was the quantities i put in the calculator. to make ONE sandwhich, here are the quantities.)
one english muffin
one slice of fried and breaded eggplant
a pinch of cheese
a tbsp of mayo
a pinch of onions
frying the eggplant: take the eggplant, and wash it. cut about 12 1/2" slices, and lay flat on paper towels. salt the slices and let the eggplant get the bitter juices out onto the paper towels for a few minutes. then, dip each slice in eggwash, then into breadcrumbs, and fry in oil. put on paper towels at the end.
toast the english muffins, put a tbsp of Fat free mayo on one slice, put a slice of eggplant, a pinch of cheese, and a pinch of onions on top.
this would be great with tomatoe, if you like tomatoes, but it tastes amazing :-)
