Angel Hair Pasta with Walnuts and Peas

Introduction

Ingredients

    6 cloves garlic, roasted
    1 cup walnuts
    1/2 cup fresh basil leaves, torn small
    2 tsp EVOO, preferably Italian flavored
    1/8 tsp salt
    black pepper
    7 oz (1/2 box) angel hair spaghetti
    2 cups peas, thawed to room temperature
    oregano
    Garli Garni (or other garlic-based seasoning blend)
    red pepper

Tips

This is very easy to make and with the adaptations it's really good. The original recipe does not call for any EVOO since the walnuts have natural oils but you can make the call.


Directions

Roast garlic; this takes about 30-40 mins total.
When garlic is about halfway done, start angel hair pasta.
Combine walnuts, garlic, basil and 1/3 cup water in food processor and pulse to a paste, about 1 minute. Add EVOO, salt, pepper and oregano and pulse to combine.
Toss mixture with hot pasta to coat. Fold in peas.
Serve topped with red pepper and Garli Garni.
