BROCCOLI CASSEROLE

Introduction

Number of Servings: 4

Ingredients

    16 oz frozen cut broccoli, thawed
    2 T butter, melted
    3 eggs, beaten
    1/2 c cottage cheese
    4 oz shredded Cheddar
    salt and pepper to taste
    dash of hot sauce (Tabasco) (optional)


Directions

Run the thawed broccoli through the food processor for a few pulses, to get chopped broccoli. (If you can get cheap chopped broccoli, use it instead. For some reason, I can't get it here.) Drain it thoroughly, pressing on it with a fork to get out as much liquid as possible.

Add everything else to the broccoli and mix well. (You can leave out half of the cheese and sprinkle it over the top if you prefer.) Transfer it to a greased 8X8 glass or ceramic baking dish. Bake at 325 for about 50 minutes, or until the cheese turns brown and it bubbles around the edges. Let it cool for at least 10 minutes before serving.
