Italian Parmesan Veggie Mix

Introduction

I tried this at one of my favorite restaurants and this is a copy cat of their recipe. I tried this at one of my favorite restaurants and this is a copy cat of their recipe.
Number of Servings: 4

Ingredients

    1 Cup Broccoli, Chopped
    1 Cup Asparagus, chopped
    1 Cup Zucchini, Chopped
    1 Cup Mushrooms, Slices
    1 Tbsp Extra Virgin Olive Oil
    1 Tbsp Smart Balance Light Butter
    1 Tbsp Reduced Fat Parmesan Cheese
    1 tsp Minced Garlic
    Salt & Pepper to taste

Directions

Turn oven on 400.
Wash all vegetables and chop or slice them.
Arrange Veggies on a cooking sheet and sprinkle with olive oil.
Bake in oven for 10 minutes.
Remove Vegetables and put in pan on top of stove.
Cook on Medium with butter, garlic and parm cheese just to melt and mix butter.
Serve. 1 Cup serving each, might be a little less because everything seems to shrink when you cook it!
Delish!!!!!!!!!
