Carrot Sambal

Ingredients

    1 tbsp ghee veg oil
    1 1/2 oz - shredded coconut
    1 tbsp black mustard seed
    1 3/4 c grated carrots
    4 tbsp - lemon juice
    1/2 c - golden raisins
    4 tbsp - fresh mint chopped

Directions

heat ghee in small skillet. add coconut and blk mustard seeds and cook over low heat , stirring constintly for 2 mins, or until the coconut is beginning to brown. transfer the mixture to a bowl and stir in the carrots, lemon juice, raisins and mint. mix well, serve.
