Ingredients

    2 - Chopped Zucchini Squash
    2 - Chopped Mexican Zucchini/Squash
    2 - Yellow Summer Squash
    10 - Chopped Medium Roma Tomatoes
    1 - Large Chopped Butternut Squash
    1 - 15 oz. Can Rinsed Dark Red Kidney Beans
    1 - 15 oz. Can Rinsed Great Northern Beans
    1 - 15 oz. Can Rinsed Garbanzo Beans
    1 - 15 oz. Can Rinsed Black Beans
    1 - 12 oz. Can of Tomato Paste
    2 - Bay Leaves
    1 - Tbsp. Oregano
    1 - Tbsp. Basil
    1- Tbsp. Black Pepper
    2 - Tbsp. Salt

Tips

This makes either 24 - 1 cup serving at 110 calories or 12 - 2 cup servings at 220 calories! It tastes Great too! Add some Cayenne Pepper or Hot Sauce to spice things up!


Directions

Place all of the listed ingredients in to a 6 quart or larger stock pot. Fill water to cover the contents and bring to boil. Reduce to a simmer and cook for 60 minutes. Serve in 1 cup servings with your favorite bread! Add cheese if desired at serving! At 110 calories per serving, this is a soup your sure to enjoy!
