Coconut Lime MAcaroons

Ingredients

    Egg white, fresh, 3 large
    Pinch of salt
    Sweetened Condensed Milk 14 oz
    Vanilla Extract, 2 tbsp
    Shredded Coconut 2 bags (28 oz)
    Lime Peel, 2 tsp
    Lime Juice, 3Tbsp

Directions

Preheat oven to 325 and line the pans with parchment paper. You could also spray the pans with cooking spray.
With a whip mix the Egg whites and salt until fluffy.
Add in all other ingredients except coconut and whip until smooth.
With a spatula fold in the coconut until well mixed.
Put the 1 Tbsp balls on the cookie sheets about 1/2 inch apart.
Bake for about 20 minutes or until the coconut is light brown.
Allow to cool before moving

Serving Size: Makes 23 1 Tbsp sized cookies
