Vegetable and Goat Cheese Fritatta w/ Spam

    Zucchini, 1 cup, sliced
    Mushrooms, fresh, 1 cup, sliced
    Garlic, 2 cloves, minced
    Onion, 1 small, chopped
    Whole eggs, 4 large
    Egg white, fresh, 2 large
    Goat Cheese, Soft, 2 oz
    Hormel SPAM, 1 oz, diced


In a non stick pan, cook the garlic on medium heat for about 30 seconds, then add the onions. Cook the onions down until they are translucent.

Add the mushrooms and zucchini and cook all the ingredients down until the mushrooms lose water. This is optional but you can incorporate the spam or turkey bacon/sausage. Cook for another 2 minutes.

In a separate bowl, separate the yolk from two eggs and discard. Add 4 whole eggs with yolk. Beat thoroughly.

Add the egg mixture to the vegetable mixture. Stir to incorporate all the ingredients, preheat the broiler.

Add the goat cheese around the frittata. Then bring the pan to the broiler and cook for 5 minutes - keeping an eye on the oven.

Slice into wedges and serve.
