Introduction

any sausage can be used ,I prefer smoked myself.

Ingredients

    16 oz Kale, ( apx12 - 14oz chopped and de vined)
    2 strips of bacon chopped
    1 onion chopped
    1 cup chicken broth
    1 Tbsp mustard
    13 oz smoked sausage or other kind as you please
    1 dash pepper

Tips

serve with boiled baby potatoes.


Directions

Blanche the Kale in boiling water for 1 minute, drain.
In a large pan, fry the bacon for a few minutes, add the chopped onion and sauté for 2 minutes add the kale and cook for 5 minutes , add chicken broth to cover and cook covered on low heat for 30 minutes, Add the sausage or sausages and mustard cook for an additional 30 minutes.

Serving Size: makes 4 large servings
