Ingredients

    2 cups spinach leaves
    1 large cucumber, cut into pieces
    1 avocado, skinned and seeded
    2 Tbsp lemon juice
    2 Tbsp red miso
    2 Tbsp minced ginger
    2 cups water (or more to desired consistency)
    1 tsp curry powder

Tips

Best fresh, will keep for up to 2 days in an airtight container.


Directions

Place all ingredients in a VitaMix (or other high-powered blender) and blend until smooth. Enjoy!
