5 oz of king fish (bones included) (you can use the head of a grouper or mahi mahi)
1 english potato
1/2 scotch or goat pepper (remove the seeds for less heat)
2 cups of water
dash of salt
1/2 small onion
The result should be a strong flavoured broth that is spicy and tart. I add some cooked vegetables such as broccoli and spinach and make it into a meal for lunch but this is not done traditionally. You could replace the potato with
2. peel and cube potato (into 6 pieces - not too small)
3. add fish, potato, remaining onion and water in a pot bring to boil and simmer until potatoes are cooked (15 mins)
4. Taste and adjust seasoning to your liking. ie. add lime juice and salt to your taste.
