Introduction

Mom cooked this whenever she had classroom treat duty or youth group snack responsibility. It feeds 48 large pieces or 72 small pieces. It's better ICED, so look for Mom's Sheetcake Icing. Number of Servings: 48

Ingredients

    2 cups whole wheat flour
    1 cup stevia OR Splenda
    1/2 tsp salt
    1/3 C nonfat instant dry milk
    Sift these ingredients together in a large mixing bowl.

    On stove, melt 1 stick butter, 1 cup water, 3Tbs cocoa, and bring to slow boil (small bubbles, not big rolling bubbles, known as a "rolling boil"). Mash 2 overripe bananas and stir into the chocolate mix when you take it off the fire.

    In small bowl mix 2 large eggs, beat well, add baking soda, 1/2 C water, vanilla, and mix. Add contents of egg mix to dry ingredients and stir quickly. Then add chocolate mix to the cake mix and stir thoroughly.

    Grease well a baking sheet. Dust the pan with cocoa powder. Pour the cake mix into it. Use spatula to level it out. Cook at 350 degrees for 20 to 25 minutes. A toothpick inserted into the center will come out clean when done. ICE WHILE STILL WARM. SEE MOM'S CHOCOLATE SHEETCAKE ICING.

Tips

This is a low carb recipe for folks who are watching their sugars. Natural sugars can replace the bananas and the Splenda, but the calorie & carb counts go up also.


Directions

Preheat oven to 350 degrees & cook for 20 to 25 minutes.

Also need saucepan to make chocolate sauce for the cake mix.

Serving Size: Makes 48 1 1/2 pieces or can make 72 1 inch squares
