Introduction

This is a simple, quick, and healthy 1 pot recipe I threw together with what I had in the fridge. It is actually really tasty and I'm sure I'll make it again. Number of Servings: 6

Ingredients

    1.5 lbs Extra Lean Ground Beef
    1 cup Onion, chopped
    6 cloves Garlic, minced
    1 cup Red Pepper, chopped
    1 can Green Chilies
    1 cup Frozen Corn
    1 can Black Beans (drained and rinsed)
    2 cups Diced Tomatoes, drained (no salt added)
    1 cup Salsa
    1 Tbsp Chili Powder
    3 cups Cooked Brown Rice
    Salt and Pepper to taste (1 tsp of each in calculations)

Directions

Brown ground beef, season with salt pepper and chili powder. Add onions, garlic, green chilies and peppers. Add tomatoes and black beans once onions and peppers are softened. Saute until tender. Add salsa and rice. Cook together for a few minutes and enjoy. Makes 5 - 1 cup servings.
