Apple Pancake

Introduction

Baked and Puffy Breakfast Baked and Puffy Breakfast
Number of Servings: 3

Ingredients

    3/4 c ww flour
    3 T sugar/maple syrup or honey
    1 c milk
    1/2 t salt
    1/2t cinnamon
    3 eggs

    1.5 c sliced apples or mangos (more fruit is fine)
    1 T butter

Directions

Heat oven to 425.
In a large oven proof skillet - Saute apples or other sliced fruit in the butter until translucent
Combine the rest of ingredients in a bowl. Pour over sauteed fruit and bake, 20 to 25 minutes, until fully brown and puffed. Check at 20 minutes but if not sure, leave in the extra 5 min to avoid an eggy texture. May be served with a drizzle of male syrup. This is not a sweet recipe. You may find you want to add more sweetener.

You can make this with mango, apple, pear, peaches, or plums. Figs seem too grainy.
