Green Curry Talapia




Number of Servings: 2

Ingredients

    2 - 4-5oz Talapia fillets (frozen)
    1c Zucchini, julienne
    1c bell pepper strips, I like red or orange for the contrast
    1/2c bamboo shoots (or any other vegetable you like)
    *feel free to add more veggies here
    2 t green curry paste (can sub curry powder)
    lime slices to cover

Directions

place 1.5 c mixed veggies on a piece of foil large enough to make a packet. Place the defrosted fillet on top. spread 1t curry paste on the fillet. Cover with lime slices. Wrap the packet and seal the edges. Bake at 350 for 10-12 minutes.
