Southwestern Casserole

Introduction

This casserole satisfies my craving for Mexican without all the calories and fat! Using baked tortilla chips would reduce it even more. This casserole satisfies my craving for Mexican without all the calories and fat! Using baked tortilla chips would reduce it even more.

  • This was pretty good. I think next time I will try making it with 2 cream of chicken soup and omit the cream of mushroom. It gave it somewhat of an odd flavor. Overall good though. I'll try it again. - 7/9/08

  • Like the flavors in this. I do agree that it is too spicy for the kids and mine would not touch it. I added a can of corn to this and it tasted great! - 5/20/08
