Vegan Lentil Soup

Introduction

Very easy, very tasty! Very easy, very tasty!
Number of Servings: 8

Ingredients

    2 cups uncooked lentils
    7 cups water
    14-oz bag frozen mixed veggies
    1 large potato, chopped
    1 Tbsp Better Than Bouillon vegetable base
    1 tsp dry oregano
    1 tsp dry basil
    1/2 tsp dry rosemary
    4 cloves garlic, chopped

    14.5 ounce can crushed tomatoes (preferably fire-roasted)
    salt and paper to taste
    a few drop of liquid smoke flavor

Tips

Double or triple the recipe and store individual portions in ziplock baggies for a quick and easy lunch or dinner!


Directions

Place lentils, water, veggies, potato, bouillon, & dried herbs in a large pot.
Bring to a boil, stir well, cover pot and continue to cook on lower heat until lentils are tender (add water if it gets too dry), about 1 hour. Add tomatoes, pepper, salt and liquid smoke. Adjust to taste. Cook uncovered for ~15 minutes, adding water to adjust thickness.

Serving Size: Serves 8 (approximately 14 ounces per serving)
