Zucchini & Pepper Pasta

Ingredients

    1/2 T olive oil
    1 garlic clove
    1/2 shallot
    1 cup zucchini, sliced
    1 cup bell pepper, chopped
    1 cup cannellini beans, drained & rinsed
    4 oz linguine, whole wheat
    lemon juice, about 1/2 of a lemon
    seasonings (parsley, red pepper flakes)
    2 Tbsp Parmesan cheese, shredded

Directions

Cook linguine according to package directions. Meanwhile, heat olive oil in a medium skillet. Add garlic and shallots; cook until sizzling. Add zucchini and bell pepper to the pan, cooking until almost tender, 3-5 minutes. Add beans and cover; cook until warmed through, about 2 minutes. Remove from heat. Add drained pasta, lemon juice, and seasonings. Toss together and serve. Top with Parmesan cheese, 1 Tbsp per serving and black pepper to taste.
