Chicken Taco Salad

Ingredients

    1 ounce tortilla chips
    1 baked chicken breast, chopped
    2 cups lettuce
    1/3 cup whole kernel yellow sweet corn
    1/3 small red onion, quartered and sliced
    1/4 cup reduced fat Mexican blend shredded cheese

Directions

Layer the tortilla chips and the lettuce on a plate or in a pasta bowl. Spray a frying pan with a little cooking spray and saute the chicken, onion, and corn for a few minutes. (If desired, you can also heat them up in the microwave.) Layer this mixture over the lettuce and immediately sprinkle on the cheese so that it can melt. Top with salsa and enjoy!
