Black Beans, Brown Rice Salsa

Introduction

Serving is approximately 3/4 cup. The sour cream and cheese is calculated for 6 servings (1 tablespoon of SC and Cheese for each serving). If you leave those items off you can have more of the Salsa. Ingredients

    1 Can Low Sodium Black Beans
    1 Pouch Brown Rice (Success Boil in Bag 2 cup/pouch)
    1 Can Original Rotel
    1 Onion, Chopped
    1 T. Garlic Powder
    1 T. Onion Powder
    1 T. Ground Cumin
    6 T. Daisy Lite Sour Cream
    6 oz. Reduce Fat Cheddar, Shredded

Tips

This is very good to eat cold or may be heated if desired.


Directions

Combine all ingredients except Sour Cream and Cheese and refrigerate for 3 hours or more for the flavors to meld. Top serving with Sour Cream and Cheese if desired.
