2 cups cauliflower, cooked & cooled
2 hard boiled eggs
1 tbs sweet pickle relish
1/2 cup sweet red pepper
4 tbs Light Mayo
1 tsp Dijon Mustard
Peel & chop the eggs & red pepper.
Mix together in a bowl.
Add relish, mayo and mustard and mix together. Add pepper to taste.
Makes 5- 1/2 cup servings
