Rice and Veggie Combo

Introduction

This is a really tasty, full of flavor rice dish. It can be used as a one dish meal. It is so low in calories that you can add other items to your meal and still stay within your goals. This is also good for people on Gluten free diets. This is a really tasty, full of flavor rice dish. It can be used as a one dish meal. It is so low in calories that you can add other items to your meal and still stay within your goals. This is also good for people on Gluten free diets.
Number of Servings: 1

Ingredients

    Long Grain Brown Rice-1/4c.
    Pork Sausage-1 patty chopped
    Onions-1 Tbsp. diced
    Green Peppers-1Tbsp diced
    Red Ripe Tomato-1/2 medium diced
    Mushrooms-1/2 c. pcs. diced
    Extra Virgin Olive Oil Spray-

Directions

Put rice on to boil first.
Spray skillet with Olive Oil Spray.
In skillet chop sausage and brown.
Drain fat from skillet.
Saute onions, peppers, tomato and mushrooms.
After your sausage is done add veggies to the skillet and saute with the sausage. When your onion looks clear it is done.
Set aside.
Make sure all the water has been absorbed from the rice by covering with a lid when it is done.
Now add the veggie/sausage combo to the rice.
Mix and stir the combo ingredients evenly. ENJOY
