Chicken & Bean Burritos

Ingredients

    1 cup of fresh or frozen corn kernels
    1 can of black beans - drained and rinsed
    1 tbsp of fresh cilantro leaves
    Juice of 1 lime

    Poached Chicken:
    3/4 lb of bone-in, skin-on split chicken breast
    1-2 carrots, sliced
    3 peppercorns
    1 bay leaf
    3 garlic cloves

    1 medium tomato - chopped
    1 tsp of cayenne pepper
    2 garlic cloves - minced
    1 cup tomato puree
    1 cup chopped lettuce

    4 medium flour tortillas (whole wheat)

Directions

In a medium saucepan, place the chicken breast skin side down and pour enough water to cover chicken. Add carrots, peppercorn, bay leaf and garlic and cover, simmering for 25-30 min.

In a non-stick pan, roast corn kernels until they're slightly brown. Add to a bowl. Add drained black beans, cilantro, and lime. (Chopped jalapeņo is optional). Set aside.

Once chicken is thoroughly cooked, remove bone and skin. Shred chicken with two forks.

Add chicken to hot pan with 2 minced garlic cloves, tomato puree, diced tomato and cayenne pepper. Mix until ingredients are combined.

Take one tortilla, add chicken mixture, add lettuce and black bean mixture. You can also top with a few pieces of feta cheese or low fat cheddar. Enjoy!
