Ingredients

    1 cup Bob's Red Mill Vegi Soup Mix
    4 cups low sodium vegetarian stock or broth
    1 large yellow onion, chopped, about 1 cup
    1 Tbsp. olive oil
    1 pkg. frozen spinach
    1 14.5 oz. can low sodium petite diced tomatoes
    1 pkg. fresh mushroom or 1 small can low sodium canned mushrooms
    1 Tbsp. garlic powder
    1 Tbsp. onion powder
    .25 tsp. red pepper flakes or less
    1 tsp. salt

Tips

You can use any brand of low sodium vegetable stock. I prefer this to plain water for added flavor.


Directions

Saute onions in the 1 Tbsp. of olive oil. Add stock, the frozen spinach, the mushrooms, garlic powder, onion powder, salt, red pepper flakes, the tomatoes, and the soup mix. Bring up to a boil, then turn heat down to low. Simmer gently for 1 hour, stirring occasionally.

Serving Size: Makes approximately 6 - 1 cup servings
