-1 boneless, skinless chicken breast
-1 cup frozen stir fry veggies (I recommend asparagus blends, but to each his own)
-1/4 cup mushrooms
-2 TBSP Lawry's Ginger Teriyaki Marinade
2. Cook chicken until done, adding 1 TBSP of marinade while cooking. You can either cube the chicken for faster cooking, or leave as a whole breast for presentation.
3. Add veggies and mushrooms, cook until veggies are crisp.
4. Add rest of marinade and cook for another minute or two, making sure veggies and chicken are coated evenly.
5. Serve over rice, if desired.
I've found this to be an excellent "Ziploc Meal", just cook the chicken and put into a Ziploc bag with veggies, mushrooms and teriyaki. Throw it in the freezer, and the night before you want to eat it, let it thaw in the fridge. By the time the chicken is hot, the veggies are done, and voila, better-than-boxed dinner!
