1 Tbsp olive oil
1 c chopped onions
3/4 c + 2 Tbsp yellow cornmeal
2 tsp chili powder
1.25 c milk (1%)
1 lb can black beans, rinsed & drained (10 oz beans)
1 lb can corn, rinsed
1 lb can stewed tomatoes
4 oz can chopped green chiles, drained
1/4 c shredded lowfat Cheddar cheese (1 oz)
Preheat oven to 350
Oil an 8-in square baking pan (spray Pam)
In large bowl combine all but cheese and mix
Place in prepared pan and top with cheese
Baked, uncovered, 50 min.
Yummy and easy!
