Have It Your Way Turkey Casserole

This is a basic turkey casserole that can be dressed up more should you choose. Or leave it like it is for a tasty dinner. Pick your spices and add to it. Ingredients

    28 oz. cooked and cut/cubed turkey (both light & dark meat - this happens to be the amount of turkey that was left over after boiling down the carcus)
    1 12 oz. package noodles
    4 tbl. corn starch
    2 qt. water OR if you have saved the water/broth from boiling the turkey meat off the bone, this makes an excellent broth

    Servings: This makes 12 - 1 cup servings
    (The servings will vary with the amount of leftover turkey, broth and noodles you use. Adjust the water/broth and noodles accordingly.) This will also freeze nicely.

Directions

I had previously boiled the turkey carcus, strained the liquid from the meat and froze both separately. This gives me my starter for the casserole.

To either the 2 qts of water or broth (add enough water to make 2 qt. broth) add 4 tablespoons of cornstarch and mix thoroughly. Start cooking the broth on medium high and add the noodles. The noodles will cook as the broth starts to thicken.

Spray a large casserole dish or pan with a non-stick spray and place the turkey into it.

While the noodles are cooking add whatever spices sound good to you. Mine change each time I make this recipe. The last time I put in rubbed sage, thyme, chili powder, garlic powder, cilantro and dill weed. As I do not cook with salt you may want to add some if you feel it needs it.

Once the noodles are cooked add to the turkey and mix thoroughly.

Bake for 30 minutes at 325 F.

Optional: You can mix in vegetables to the casserole if you wish or you can serve them on the side.

You can also add a crunchy crust on top if you would like. I sometimes like to crush up Doritos Nacho chips and add melted butter to put on top...but this is high in fat and calories.
