Teriyaki Tofu

Introduction

This is an quick & easy go to dinner that is high on taste and a nice texture. It is vegetarian and I make it gluten free as well. This is an quick & easy go to dinner that is high on taste and a nice texture. It is vegetarian and I make it gluten free as well.

Ingredients

    1 pkg.(12 oz.)light firm tofu, drained, cut into 1in. cubes
    2 green onions, finely chopped
    1 teaspoon granulated garlic (or use 1 clove chopped)
    1 teaspoon ground ginger
    1 teaspoon olive oil
    1/2 teaspoon sesame oil
    1 - 1/2 cups chopped fresh broccoli
    1/2 cup chopped red bell pepper
    2 tablespoons gluten-free teriyaki sauce
    1 teaspoon cayenne pepper

Tips

I make my own teriyaki sauce to make it even more cost effective.

Directions

Spray non-stick skillet with gluten-free cooking spray. Over high heat add tofu, green onions, garlic, olive oil, and sesame oil. Cook stirring often for 3 minutes. Add broccoli and cook for about 8 minutes. Add red peppers and cook an additional 4 minutes until the tofu is browned on all sides. Stir in the teriyaki sauce and cayenne pepper and cook another minute and remove from heat. Serve immediately.

Serving Size: Serves 2 - approximately 2 cup size servings.
