Melissa's Modern Scones, the Tea Tzarina

Number of Servings: 16


    2 Cups unbleached organic flour
    2 TBS granulated sugar
    1 TBS Baking Powder
    1 Pinch of Salt
    1 stick chilled Butter, unsalted (no substitute)
    3/4 fat free Milk (I use Lactaid)

    opt. add in 1 Cup Craisins, plumped in 1 Cup warm water. can substitute dried currants.


Mix dry ingredients in a med bowl by hand. use food processor to "cut in" butter chunks, until grainy or pebbly texture.

Slowly stream in the milk while pulsing. (if food processor is not available use a pastry cutter or two butter knives, instead). Dough will be sticky and thick like playdoh. Visible clumps of butter are HIGHLY desired.

Gently knead and shape into a ball. (not overworking the dough, or else the scones will turn out tough.

Cut into 16 equal pieces, about 2"x1/2" rectangle each. Place evenly on ungreased cookie (I use wilton parchment paper) sheet.

Bake in 425* oven for about 15 minutes or until golden brown.

makes 16 scones

(optional) serve with quality jam or Lemon Curd and cream
