Tofu Mustard Cabbage Soup

Introduction

Low calorie, satisfying vegetable tofu soup. Low calorie, satisfying vegetable tofu soup.
Number of Servings: 4

Ingredients

    1 tsp olive oil
    2 minced garlic cloves
    I TBS minced ginger root
    1 carrot julienned
    1 minced jalapeño pepper
    1 chopped scallion
    1 bunch mustard cabbage (3 cups chopped)
    2 cups free range chicken broth
    1 cup water
    1 stalk lemon grass
    2 TBS chopped cilantro leaves
    1 cup brown rice
    6 ounces cubed firm tofu
    3 TBS miso paste

Directions

Makes four servings.

Saute garlic, ginger, carrot, jalapeño pepper, and scallion in oil on medium heat for a few minutes.

Add chicken broth, water, mustard cabbage, cilantro, lemon grass stalk, brown rice and simmer for 15 minutes.

Just before serving add miso paste and tofu - stir and simmer gently until tofu is heated.
