Introduction

I figure it is now it is time to share my award winning recipe...enjoy! NOTE: I redid the directions to using a crock pot as this is what I usually make it in, so much easier!!! I figure it is now it is time to share my award winning recipe...enjoy! NOTE: I redid the directions to using a crock pot as this is what I usually make it in, so much easier!!!
Number of Servings: 20

Ingredients

    * 1-pound dried navy beans
    * 5-cups low sodium chicken stock
    * 4-tablespoons (1/2 stick) butter
    * 2-tablespoons minced garlic
    * 1-1/2-cup diced onion
    * 1-1/2 cup green chilies (fresh or canned), chopped or jalapeno peppers
    * 2-pounds skinless boneless chicken breast, diced
    * 2-tablespoons ground cumin
    * 1-tablespoon dried oregano
    * 1-teaspoons white pepper
    * 1/2 teaspoon black pepper
    * red pepper flakes, to taste
    * 1/2-bunch cilantro, chopped (or 1/2-tbsp dried)
    * 8-oz pkg of fat free cream cheese, cubed

Directions

(1) Wash beans, cover with water, and soak for overnight.
(2) Place beans in a 5-quart crock pot with the chicken stock.
(3) In saucepan, heat butter and sauté garlic, onion, and chilies for 5 minutes.
(4) Add to bean pot.
(5) Add chicken, cumin, oregano, black pepper, white pepper, red pepper, and cilantro.
(6) Cook on low for 4-hrs or high for 8-hrs.
(7) Add cubed fat free cream cheese and stir. Let melt before serving, about 15-20 minutes.
