Strawberry Banana Muffins

Ingredients

    1 cup fresh chopped strawberries
    1 chopped ripe banana
    2 cups Bisquick heart smart mix
    2/3 cup 1 % milk
    1/3 cup sugar
    1 egg

Directions

Beat egg, mix egg, sugar, milk and bisquick in medium bowl. Add strawberries and banana. Fill 12 muffin tins, either sprayed with pam or lined with paper. Bake in oven at 375 for 15-18 min. until lightly browned.

    Left out the banana and instead added a bit of vanilla. Also did 3/4 of a cup of splenda instead of the sugar. Very good simple recipe, doesn't taste like it has so few ingredients. - 3/17/10

    I made this with some adjustments and it turned out great. I pureed the strawberries and banana, used skim milk (and less of it) and splenda, instead of regular sugar. - 4/15/08

  • Just made them this afternoon. I used Splenda instead of sugar, 2% milk because it's what I had, and added a 1/4 tsp of vanilla.I also put the strawberries and banana in my little chopper until they were not quite pureed. Delicious with my afternoon cup of tea! - 1/6/13

  • Great use of ripe bananas. I also added some Craisins and used a Splenda/sugar blend and egg substitute. I think next time I will use some vanilla flavoring also. - 5/29/11

  • Very healthy and nutritious! Tastes good, but I think next time I make them I will use less banana and add more strawberries or another berry. Keep in mind that I don't care for bananas much. - 3/11/08

  • Very tasty. I would love them to be more sugary, but that is why I am chubby to begin with..lol So I will rely on the fruit to get my "sweet" . These are moist and yummy! It was hard to eat only one! - 3/6/08
