Introduction

I love fried rice so I was really excited when I could make it healthy and you can put your own spin on it with different veggies I love fried rice so I was really excited when I could make it healthy and you can put your own spin on it with different veggies
Number of Servings: 6

Ingredients

    1c sliced mushrooms
    1/2c diced onion
    1c diced zucchini
    3 spears asparagus chopped
    2c broccoli
    20 baby carrots diced
    1tbls olive oil
    4 small chicken breasts
    4tbls soy sauce
    2c uncooked brown rice
    2/3c egg beaters

Directions

In a sauce pan add chicken and enough water to cover them, bring to a boil and simmer until cooked through; Let stand few minutes to cool and dice into bite size peices; cook your rice to package directions I don't add anything to it; Let set to cool; In a large saute pan add olive oil and veggies saute until crisp tender; Add rice and chicken breaking up rice until hot; Move rice mixture to side of pan. In the same pan cook eggs stirring constantly, until eggs are thickened throughout but still moist. Stir eggs into rice mixture. Stir in soy sauce and a bit of pepper
