Chicken Piccata

Ingredients

    4 Boneless, skinless chicken breast halves
    2 tablespoons of flour
    2 tablespoons of oil
    2 tablespoons of butter
    1 clove of garlic minced
    1/2 chicken broth
    1/4 white wine
    2 tablespoons lemon juice
    1 tablespoon capers, drained
    1 tablespoon parsley, chopped

Directions

Pound chicken breast to 1/4" thickness. Dredge in flour. Heat butter and oil in skillet over medium heat. Brown breasts on both sides, about 2 minutes each side. Add garlic, broth, wine, and lemon juice. Cover and simmer 10 minutes. Remove chicken from pan. Add capers and parsley, cooking until thickened. Return chicken to sauce, serve.
