Eggs Benedict with Garlic Aioli #2

Introduction

Slightly modified recipe from "Cook Yourself Thin" cookbook. Slightly modified recipe from "Cook Yourself Thin" cookbook.
Number of Servings: 1

Ingredients

    1 large egg - poached
    2 oz of smoked salmon lox
    Thomas' English Muffin, Hearty Grains 100% Whole Wheat - 1/2 muffin
    Hellmann's Light Mayonnaise - 1 Tbsp
    Lemon Juice - 1 wedge of lemon
    Garlic - 1 clove minced
    1 tsp of Parsley - dried or fresh
    chopped chives are optional

Tips

You can switch the turkey with a salmon lox or for vegetarians, a tomato slice and baby spinach.


Directions

In warm water with vinegar, poach 1 egg. Toast english muffin and set aside. I placed mine in a broiler for a minute.

In a small bowl, combine lemon juice, mayo, lemon zest, garlic and parsley. Add salt and pepper to taste.

On a plate, serve the muffin, turkey slice, poached egg and top with the sauce. Garnish with chives if desired.
