Portabella Tuna Melt

Introduction

Ingredients



    Portabella Mushrooms, 3 large caps
    Tuna, Canned in Water, 6 oz
    Cheese, Swiss, reduced fat, 3 slices
    *Lemon Juice, 1 lemon yields
    Olive Oil, 2 1tsp
    Celery, raw, 2 Tbsp, diced
    Onions, raw, 2 tbsp, chopped
    Basil, .1 tsp
    Pepper, black, 1 tsp
    Red Ripe Tomatoes, 3 slice, thick/large (1/2" thick)
    butter flavored cooking spray

Tips

You can also broil these in the oven., watching closely to keep from burning.


Directions

Lightly brown mushroom caps in cooking spray. Mix together tuna,celery and onions. Whisk together olive oil, lemon juice,basil and black pepper. Pour over tuna mixture and stir to combine.Put mushroom caps in a lidded saute pan. Spoon tuna into each cap equally. Top each with a slice of tomato and a slice of cheese. Cover and cook until heated through and cheese is melted.

Serving Size: 1 mushroom cap
