DogBeard's Favorite Chili with Roasted Peppers

Introduction

Number of Servings: 8

Ingredients

    1 lb. ground beef
    1 tbs. olive oil
    1 medium to large onion
    2 cloves garlic, crushed
    2 cans kidney beans, drained & rinsed
    2 cans diced tomato (do not drain)
    1/2 package Trader Joe's frozen Fire Roasted Peppers & Onion
    1 cup water
    1 tbs chili powder
    1 tbs ground cumin
    1 tsp onion powder
    1 tsp garlic powder
    1/2 tsp celery salt
    after simmering: salt & pepper to taste and adjust seasonings to taste

Tips

The fire roasted peppers add such a nice flavor that I like this chili just the way it is, without adding cheese or sour cream. Plus it freezes well.


Directions

In a large pot, brown ground beef in olive oil. Add chopped onion and garlic and cook 5 mins., until onion is translucent. Add beans, tomato, and frozen peppers. Add 1 or 1-1/2 cups water, until the consistency is like a stew.
Cook on medium low until simmering. Add garlic powder, onion powder, chili powder, celery salt, and ground cumin. Stir well. Simmer for about 1 hour, then taste and adjust seasonings.

You will probably need to add salt, but wait until the end because you never know how salty those canned goods are. I usually add more cumin and chili powder too.
