Salt and Chili Shrimp atop Indian Aromatic Basmati

Introduction

Ingredients

    Salt and Chili Shrimp
    10 large Shrimp, cooked
    1/8 cup Rice Flour
    1/8 cup Cornstarch
    1 TBS Garlic, fresh
    1/2 tsp Salt
    1 Spring Onion, chopped
    1 medium Onion, cut julienne
    1/2 cup Carrots, cut julienne
    1/2 Green Bell Pepper, strips
    1.5 tsp Chili Flakes
    1 tsp White Pepper
    dash of Soy Sauce
    3 TBS White Cooking Wine

    Indian Aromatic Basmati
    3/4 cup uncooked Basmati
    1 cup Water
    dash of Salt
    1 tsp Cumin

Directions

Salt and Chili Shrimp
If shrimp is frozen, properly thaw it naturally beforehand.
Mix rice flour and cornstarch in a bowl, then batter shrimp in it.
Spray pan with cooking spray and fry the shrimp, garlic, salt, spring onion, onion, carrots and bell pepper for 3-5 minutes (just long enough for the batter to brown).
In same bowl mix chili, pepper, soy sauce, white cooking wine.
Pour over shrimp and continue frying 3-5 minutes (just enough time for sauce to thicken a bit).

Indian Aromatic Basmati
Add basmati, water, salt and cumin to a sauce pan.
Boil, then simmer on low, covered, until rice is tender and water is absorbed.
