My Favorite Gazpacho

Introduction

Cold Tomato Soup Cold Tomato Soup
Number of Servings: 10

Ingredients

    6 Large ripe tomatoes, chopped
    1 cucumber, peeled and chopped
    1 large bell pepper, red green or yellow or combo of all three chopped
    1 small red onion chopped
    1 cup celery chopped
    2 tbsp. parsley chopped
    1 tsp salt
    1/2 tsp black pepper
    1/4 cup red wine vinegar
    6 cups tomato juice
    2 tbsp. olive oil
    2 medium lemons, juiced
    5 cloves garlic, chopped
    1 jalapeno pepper, seeded, deveined and chopped
    4 tsp. sugar

Directions

Chop all vegetables, add seasonings and tomato juice. Place in small batches in food processor and process until desired size. Chill, gets better with time. Serve cold.

Serving Size: Makes 10 1 1/2 cup servings
