Quinoa with Zucchini

Ingredients

    1 cup low sodium vegetable broth
    1/2 cup quinoa, rinsed in cold water
    2 T. olive oil
    1 medium onion, chopped
    1 garlic clove, finely chopped
    1 lb. zucchini, cut into 1/2 inch cubes
    3/4 tsp. ground coriander
    1/2 tsp. chili powder
    1/4 tsp. ground cumin, not cumin seed
    1/4 tsp. black pepper
    3 Tbsp. minced parsley
    3-4 Tbsp. chopped basil
    Juice of one fresh lemon

Tips

You can add salt to taste, but it is not configured in the nutritional info.

You can use as much or as little lemon juice as you'd like.

You can also prepare this using couscous instead of quinoa.


Directions

Prepare quinoa with broth according to package directions. Cook about 15 minutes, or until liquid is absorbed. Set aside.

In a large skillet, heat olive oil over moderate heat. Saute onion until golden, stirring occasionally, about 6 minutes. Add garlic, and saute until fragrent, about 1 minute. Add zucchini, stirring occasionally until just tender, about 5 minutes.

Reduce heat to moderatley low, then stir in coriander, chili powder, cumin, black pepper and cook, stirring frequently about 2 minutes.

Gently stir the zucchini mixture into the quinoa and cool to warm or room temperature. Just before serving, stir in the parsley, basil and lemon juice

Serving Size: Makes approx. 6 - 1 cup servings
