Simple Lentil Soup
IntroductionMy daughter has a lot of food sensitivities so I make this version of lentil soup so we can both enjoy it. There's not much to it but it is flavorful and filling. 1 Cup lentils (I use French green)
3 Large organic carrots, sliced 1/4" thick
1 - 28 ounce can diced tomatoes - or 3 cups of fresh diced
2.5 Cups organic veggie broth
1 Tbsp minced garlic
1 whole bay leaf
1 tsp. Mrs. Dash Lemon Pepper Seasoning Blend
1 tsp. Mrs. Dash Chipotle Seasoning Blend
I prefer the consistency of French green lentils for soup, but any lentil will suffice.
We sometimes add Tapatio to spice this up. Liquid smoke is good for a smokey version, too.
Any number of veggies are good in this; zucchini, celery, onions, diced potato, diced bell pepper, peas, etc.
This can also be made in a slow cooker, but I don't know the cook time off hand.
Put lentils in a large sauce pan with 2 1/2 cups of veggie broth. Heat on medium low.
Add bay leaf, garlic and carrots.
Once it begins to simmer turn heat to low and continue simmering for 45 minutes or until lentils reach desired consistency.
Stir in tomatoes and Mrs. Dash spices, or whatever seasonings you prefer. Cook another 5 minutes.
Serve and enjoy!
