Karen's Breakfast Quinoa

Introduction

Number of Servings: 3

Ingredients

    1/2 cup 2% milk
    1/2 cup water
    1/2 cup Bob's Red Mill Quinoa
    1/2 teaspoon ground cinnamon
    1 tsp. vanilla extract
    granulated sugar
    fat free ricotta cheese

Directions

Rinse the quinoa in cold water and strain. Combine the water and milk in a small saucepan. Add the quinoa and the cinnamon, stirring to mix. Bring up to a boil, stirring, then lower heat to a simmer, cover and cook for 15-20 minutes or until almost all of the liquid has been absorbed. Turn off the heat and let stand 5 minutes. Add the vanilla and stir. Fluff the quinoa with a fork.

To serve, place 1/2 cup of fresh blueberries in a bowl. Top with 1/2 cup of quinoa. Sprinkle with 1/2 teaspoon of sugar and 1 Tablespoon of fat free ricotta cheese.

Serving Size: Makes 3 1/2 cup servings of quinoa
