Turkey Rice Loaf

Ingredients

    *Brown Rice, long grain, 2 cup
    ground turkey 85/15%, 12 oz
    Spinach, frozen, 1 cup
    Cider Vinegar, .25 cup
    Olive Oil, 3 tbsp

Tips

My son likes to use ketchup over the top in traditional "meatloaf" style, but my daughter liked the fat-free Balsamic Vinegar salad dressing made by Maple Grove Farms of Vermont.


Directions

Steam 1 cup of dry brown rice according to directions on the package. Let cool for 5 minutes.
Thaw the frozen spinach & drain all water. Set aside.

Combine all ingredients together as if you are making meatloaf.
Add the following seasonings. You decide the portion according to your taste: salt, pepper, garlic powder,
fresh basil and/or rosemary ( I use these 2 fresh herbs from my garden, snipping off about 2 TB of each with kitchen shears. )

Press this "loaf" into the bottom of a casserole dish or a 9" X 9" pan. Bake for 20 minutes covered in foil and 5 -10 more without foil.
