Ingredients

    eggplant
    mozzarella
    cottage cheese
    parsley
    parmesan cheese
    lemon juice
    egg substitute
    salt
    pam
    scallions

Directions

peel and slice eggplant the long way into 1/4 in slices. sprinkle each slice on both sides and lay along sides of colander to drain for 30 mins. add cottage cheese, 1/2 the mozzarella, lemon juice and 1/2 the parmesan to food processor and blend til smooth. add the parsley and scallions and blend 10 seconds. pat & drain eggplant on paper towels.preheat broiler. lay eggplant slices on cookie sheet and spray with pam on one side. broil about 5 minutes and turn over spray with pam and cook another 5 minutes. lay on paper towels to dry. preheat oven to 350. put 2 tbs filling on each slice and roll up. line baking pan with sauce. place rolls in single layer on sauce, then cover with more sauce. add the rest of the mozzarella & parmesan cheeses. bake 30-40 mins.
