Roasted Veggies

Number of Servings: 4

Ingredients

    Red pepper (med)
    Yellow pepper (med)
    Cailiflower 1/2 of large head
    Cabbage I/2 of 8" head
    Extra Virgin olive oil
    salt to taste
    pepper to taste

Directions

Heat oven to 375 degrees. Rinse and pat dry vegetables and and chop in fairly small chunks, then place in large bowl and add oil and seasonings. Stir well and place on sprayed cookie sheet. Disperse evenly. Roast for 15 minutes and pull out of oven to stir. Place cookie sheet back in oven for another 15 minutes or until vegetables blacken a little on the edges.
