Tangy Not-Alfredo

Introduction

For those of you who miss that creamy alfredo texture, this is sure to hit the spot! For those of you who miss that creamy alfredo texture, this is sure to hit the spot!
Number of Servings: 1

Ingredients

    2 oz. Pasta of your choice
    1 4-6 oz Boneless, skinless chicken breast (quite cold, almost frozen)
    3 Tbsp. Hummus
    Salt and Pepper to taste

    for a quick and tasty salad:
    2-3 cups Lettuce of your choice
    1 Half of a Red Bell Pepper
    1 Serving of your favorite salad dressing

Directions

Put a pot of water on to boil, and season with salt. Also, heat up your outdoor grill, or indoor grill pan and spray with cooking spray. While that's happening, slice chicken breast on a bias. This will make the meat more tender, even if you overcook it a little! *The chicken should be almost frozen to make it easier to slice!* Also, chop up some lettuce and that red bell pepper!

Once water boils, drop in your pasta and lower the heat. Cook as directed on package. Also, season chicken and add the slices to the grill. Cook for maybe five minutes per side, but you'll be able to tell when their ready by the fabulous grill marks you'll see!

Once that's all done, strain the pasta, but save a bit of the water. Add pasta back to the pot and place over low-medium heat. Stir in the hummus until creamy and delicious, then add the sliced chicken.

Plate with the salad, side by side, and get ready for a splurge that really isn't!
